ST GEORGE'S MUSHROOM, MAY MUSHROOM
Calocybe gambosa
While summer and autumn are the seasons of abundance for mushroom foragers, springtime brings a few prime edibles to Edinburgh also. This is the time to look along roadsides, grassy verges, and in leaf litter for Calocybe gambosa, St George’s mushrooms (the common name stems from them appearing around April 23rd, St. George’s day. I found the first batch this year on April 24th, right on cue.)
